This recipe comes to you from my 11 year old nephew. This is one of his favorite late night snacks. He’s lactose intolerant so ice cream is out of the question. Anyone who has tried lactose free ice cream knows that it leaves a whole lot to be desired, literally! My nephew’s Mom has been coming up with recipes for him for years. This one is so easy he can make it himself!
- 2 fresh mangos, peeled and cubed. Frozen is better for sorbet. (when out of season buy organic frozen)
- 1 cup fresh pineapple chunks. Preferably frozen (when out of season buy organic frozen)
- 1/2 cup coconut milk
- 1 tablespoon of agave sugar
Place all the ingredients into your Vitamix blender and crush until smooth. If you’re not using frozen fruit then blend fruit ingredients first and add ice until the sorbet is the desired consistency.
