In my search for the perfect smoothie, I came across this recipe for Purple Cabbage Smoothie by Lena of My Pure Vegan Food found on Healthy Mama. Something she wrote struck me as interesting: “A lot of people like to make ‘green smoothies’, where you blend greens with fruit. But if you blend a lot of greens with berries, you often get an unaesthetic brownish color (which still tastes great but not easy on the eyes for the kids). If you substitute purple cabbage for greens in a berry smoothie, you’ll get a brilliant purple color.” That’s brilliant! And she’s so right. My fruit/veggie smoothies almost always turn out looking a little puke-ish. But what’s not to love about a bright purple smoothie? Plus, it’s super easy to make!
WHAT YOU NEED
1⁄4 purple cabbage
1 banana – frozen
1 tablespoon maple syrup
1 cup almond milk

- Blend in your blender until smooth.
- Top with hemp hearts. Enjoy your health!
