If you’re bananas for kale … and bananas … this is a must-try smoothie recipe. All the health benefits of kale blended in a delicious banana smoothie. It’s perfect for breakfast on the go, a quick snack or even as dessert.
WHAT YOU NEED
- 1 frozen banana
- 2 cups chopped kale (this can be frozen, too)
- 1/4 cup almonds
(OR 1 tablespoon flax seeds)
- 1/2 cup of 100% pure coconut water
(OR 1 teaspoon maple syrup and 1/2 cup light unsweetened soy milk)
WHAT TO DO
Throw everything into your blender and puree until smooth. I like to massage my kale before throwing it in, but you don’t have to.

TIPS FOR FREEZING KALE
Can you freeze kale? The answer is a resounding yes! So says Julie Martens Forney.
To freeze kale for smoothies, remove leaves from stem and blanch them for 2-3 minutes, covering the boiling water pot with a lid to steam-heat floating leaves. Place leaves in ice water. Use a strainer to fish leaves from both boiling and ice water. Dry leaves by placing them on a towel. Fill the towel with leaves, then roll it up and squeeze to remove excess water. Place blanched, dried kale into freezer bags and remove as much air as possible before sealing bags. Avoid over-packing the bags.
Frozen kale can last 8 to 12 months.
