If you enjoy a high-fat lifestyle, you can avoid the negative side effects by making sure your gut bacteria is healthy, according to research from George Mason University.

A thriving colony of the right kind of gut bacteria could help offset damage to vital organs caused by a high-fat diet, said Robin Couch, a George Mason chemistry professor who’s been researching metabolic alterations as part of a project funded by the U.S. Department of Agriculture.

It soon could be as simple as taking a pill loaded with a dried bacteria blend, an approach that’s part of using probiotics to improve health, Couch said. Probiotics are a mixture of living microbes that affect the digestive system. They’ve been a nutritional buzzword for some time now­­––just check out the yogurt section of the grocery store or walk down a health food store aisle.

“The old adage is that you are what you eat, but more recently we have discovered that it’s really, you are what your microbes make in your gut,” Couch said. “The gut and its effect on the body is a big deal in your overall health.”

Probiotics may help mitigate unhealthy eating habits. Mason researchers have discovered that animals fed a high-fat diet supplemented with a side of probiotics maintained healthy vital organs such as the heart and liver, said Couch, adding that a published paper is forthcoming. Without probiotics, those organs showed the ill-effects of poor nutrition, he said.

While promising, there’s still a lot to know about how probiotics work, said Couch, whose lab has two USDA-funded doctoral students working on the problem. Researchers are figuring out how much and what kind of bacteria creates a healthy gut. The result could be a probiotic “cocktail” that helps beneficial bacteria flourish, he said.

Also, probiotics could help with Crohn’s disease, which is an inflammation of the digestive track. Couch is working with USDA researchers to discover the chemistry behind how a pig parasite helps sufferers of Crohn’s disease by decreasing inflammation in their digestive system. His hope is that a blend of probiotic bacteria in pill form could have the same effect as the worms.

When I was 275lbs and struggling with my weight, the last thing that I thought about was inflammation causing my problems… I had always resorted to the basics… simple calories in vs. calories out to lose weight, BUT that was NOT the case here. And back then, this was a long drawn out process, simply because the science wasn’t really there at the time. Most of us don’t really have the time or the energy to devote to experimenting with different foods to find what works for them.

Well, I did reduce my inflammation, and I was able to get back on track and ultimately become on author on this very topic, but it took a lot of time.

So over the past six months, using my experiences and my research I have developed a way to reduce inflammation within the body and to help the body absorb nutrients again, all with a WHOLE FOODS approach. We have all heard a lot of different reasons from the time that we were young about why we need to eat grains and how they are healthy for our bodies. The emerging evidence is that this is no longer true for a variety of reasons.

Here are the reasons we have been told that we need to eat grains:

  1. You need the fibre! For years, we have been told that we need the fibre that grains provide, but the truth is completely different.  In fact, scientists have discovered that high-fibre foods can rupture the gastrointestinal tract by banging up against the cells that line it and rupturing their outer covering.  The result is that it the lubricating mucus is increased.  If a person has irritable bowel syndrome, they should consider not eating grain because they truly do not need it.  In fact, there are a lot of fibres contained in vegetables that cover and replace what you would get from grains.
  1. Grains contain minerals and vitamins. Yes, you need to ingest the necessary vitamins and minerals for your body including B1, B2, iron, potassium, zinc and magnesium, but you do not need to eat carb-dense grain that is bulky.  Eat a giant salad instead!
  1. Grains are the foundation of the food pyramid. This thinking has not been examined for many decades, and it is completely wrong.  In fact, grains are the most pointless food in a healthy diet.
  1. Grains contain lectins that bind to insulin receptors, human intestinal lining and attack the stomach lining. They can also be the cause of leptin resistance that worsens metabolic syndrome.
  1. Grains also contain gluten that is found in barley, rye and wheat and is a composite of the proteins glutenin and gliadin. People who are gluten intolerant can suffer from deficient vitamin D3 and calcium levels, bone defects and hyperparathyroidism.  Some people are not celiac, but they test positive for anti-gliadin IgA in their waste products. If this is in stool, then it is because your body is trying to fight the threat of gluten.
  1. Phytates, also contained in grain, cause minerals to be bio-unavailable, so it renders the consumption of cereal grain pointless.
  1. Modern grain milling is very efficient and fast. It gives the processing plant a large amount of control over how the grain is separated and creates flour that lasts forever.  It can be shipped over long distances to provide food for massive populations.  It remains pest free because there is nothing in it that pests want or need nutritionally.   It was the very first processed food and allows shelf stable foods to be created months ahead of the time of their distribution.
  1. Grain milling eliminates the proteins, lipids, vitamins, and minerals that are found in bran, germ and shorts. The middlings are the nutritional portion of the grain that is used in animal feeds, ironically.
  1. Although white flour is harmful and contains no known nutrients, it is one of the most widely used products worldwide.
  1. Wheat has been engineered to be drought and pest resistant. It is simple to harvest, giving farmers a higher yield per acre.  The biological manipulation that has hybridized wheat, which has increased the gluten, creating an end product that results in fluffier baking products.  Today we are eating grains that are bleached, chemically treated and converted into a “food” that no other living animal on the planet will eat.

Simply put, there is no good reason for people to eat grains or to rely on them as part of their diet.  We don’t need grains in our diet as part of our survival.  They are a natural pest deterrent in the wild and are not something you want to put into your body.

Here are some very good reasons why this lifestyle is great for everyone:

  1. If you enjoy being outside and taking part in a variety of activities such as stand up paddle boarding, surfing, hiking, golfing, biking, snowboarding, etc., you want to stay fit. Primal/paleo training gives you the strength that you need to have endurance in all of the activities you want to undertake and it provides you with a good basis for strength and fitness.
  1. You want to get fit without having to go through gruelling training. Many people pursue a high level of fitness through sacrifice, hard work, discipline, and misery.  Getting great results with the least amount of pain, sacrifice, and hard work is important.  If you eat right, do HIIT training and lift weights you will become very fit and healthy.
  1. You enjoy great food. When you remove grains, hydrogenated oils, sugars and processed food from your diet, there is still a lot of other foods that are very healthy for you that you can consume whenever you like.  You are not going to be as hungry as you were once you cut out processed foods and sugars.  You are fueling your body with tasty foods that are filling and healthy.  Best of all, you will not suffer from the health effects that processed foods can have on your body.
  1. You do not like to get sick. When you adopt a paleo lifestyle, you have all that you need to boost your immune system.  Allergies start to disappear, and you rarely get a cold or the flu.  Your bolstered health is because your body will be properly nourished and have all that it needs to remain healthy.
  1. You like to get a good night’s sleep. It is important to get at least 8 hours of sleep every night to recharge your batteries.  Sleep is a very important part of your health regime, so you should ensure you are getting enough each night.
  1. You want to look great naked. Your body composition is 80% determined by how and what you eat.  The other 20% is based on exercise and genetics.  If you have your diet adjusted correctly to what your body needs then it does not take much exercise to optimize your muscle size and strength.
  1. You like to have a healthy glow. Part of the Paleo lifestyle is to get adequate sun on your skin every day.  Vitamin D is derived from the sun and is a natural way to get your daily intake.  Getting the sun on your skin is good, within reason and for limited amounts of time.
  1. You don’t have to be organized. There are no set meal times, no calorie counting or portion control and you can eat as much as you like when you want to.  You do not have to be disorganized to benefit from a paleo lifestyle but if you don’t like a regimented schedule, this works well.
  1. You don’t want to injure yourself. If you want to stay away from injury, then Paleo fitness gives you a set of guidelines that promote workouts that focus on functional strength that is balanced and prevents injury while burning fat and building muscle.
  1. You like to know your efforts will pay off. If you are investing your time and energy into something, you want to know that it is going to pay off in the long run.  You want to know which choices you need to make and know that you are making the right choices.  The guesswork is removed when you follow a Paleo lifestyle.

Easy & Delicious Mashed Cauliflower Recipe!

I can barely type I’m so excited about this recipe for Cauliflower Mash!! My Mother in Law sent me a recipe for a cauliflower mash last week and it inspired me to try to make my own. I have always been skeptical that any veggie can taste like mashed potatoes but I have been proven wrong. This is better than mashed potatoes!!!! You seriously cant believe how creamy it tastes.

This is a side dish which will be a major staple for us now. Besides being delicious, cauliflower has many health benefits. It contains a large amount of Vitamin C, folate, and Vitamin K. Not to mention it is very low in calories so you can eat a lot of it.

I served the cauliflower mash with sliders that were out of this world! I will share that recipe soon. The cauliflower mash is so important it needed its own recipe post. We have leftover mash that I am going to reheat with chicken this evening. You could really change this mash recipe by adding any herbs you desire or even a little prosciutto for crunch and of course there’s always room for cheese!

1 head of cauliflower
2 cups of chicken stock
4 sprigs of fresh rosemary
5 cloves of fresh garlic

Cut the leaves of the cauliflower and discard (they taste bitter)
Place cauliflower in dutch oven or crock pot with 5 cloves of smashed garlic and rosemary leaves.
Cover with chicken broth and bring to a boil for 15 mins (check it halfway through so it doesn’t burn). Depending on your heat setting cook for as little as 10 mins. or as many as 20 mins.
Remove the cauliflower from the broth and place the cauliflower into the Vitamix or food processor. The rosemary and garlic will be chopped/ground thoroughly in the blender. Do not add the broth to the mash as it would make the mashed cauliflower too wet.
Mash the cauliflower on low until creamy smooth. Make sure to spoon down the sides so the larger chunks of cauliflower get mashed too.

I made mine earlier in the day so I just put it into a baking dish and reheated before dinner. Tastes great reheated. Also can be prepared the night before for Thanksgiving dinner.
